Sun-dried Tomatoes + Eggs

I LOVE EGGS. I love them. I actually used to have something against them (and so did my husband, pre-marrying me), but now I can openly say I LOVE THEM. We both do. They're so versatile and cheap. 

I was hesitant to post this for two reasons. Reason #1 - I didn't want to get made fun of. My husband constantly references the fact that Gwyneth Paltrow's cookbook contains a recipe for avocado toast, which is literally just avocado put on a piece of toast. 

Reason #2  -  it felt too simple to call a recipe, but I was recently inspired by two of my favorite bloggers (see here and here) to appreciate minimalism in the kitchen. My natural instinct when I look for a recipe is to be drawn to ones that have a lot of fancy components (think Triple Chocolate Nutella Cheesecake Brownies with Brown Buttered Glaze and Roasted Pecans) because that must make them really good, right? Sometimes it makes them better, but often times it doesn't. We think that by adding more and more ingredients to a dish we are improving it, but we really aren't.  I've found that the simpler my recipes are, the more I enjoy making them.  I have a feeling you will be seeing a lot more simple recipes on the blog in the coming year. I think I might be evolving into a minimalist? Maybe. 

Make these eggs! Make 'em!  

Please note that you can make as many eggs as you need.  Consider this more of a guideline and adapt it to your liking. Add how ever many sun-dried tomatoes you like (we think the more the better) and then crack how ever many eggs you think you need. 

Sun-dried Tomatoes + Eggs 

  • 3-4 tablespoons Sun-dried Tomatoes in oil
  • 5 Eggs
  • Salt and pepper to taste

Heat a skillet on low and spray with nonstick spray. Add the sun-dried tomatoes and allow them to cook for 1-2 minutes. Crack the eggs over the sun-dried tomatoes. Continue to leave the stove on low, cover for 5 minutes or until the whites are set. Remove from the skillet and enjoy!
